Although most coffee geeks know the basics - use fresh beans, grind your own coffee, keep your equipment clean, etc. - the one aspect that our team at Third Wave Water finds is often overlooked is the quality of water utilized.
Coffee is 98% water. So, it makes sense that the quality of H2O you use makes an impact on your favorite cup of Joe. 
Whether you use tap, spring, or your favorite bottled water, the outcome of your coffee all depends on where that water originated. Just like local conditions such as soil type, rainfall, and solar intensity change the flavor of the coffee bean, varying minerals like dolomite, halite and limestone alter the flavor of water based on its location. These varying minerals combined with allowable contaminants vary across the globe, affecting not only the flavor of water, but also your cup of coffee.
As a coffee shop owner, it didn’t take long to realize that if I wanted to give my customers the perfect cup of coffee, I’d have to start with the perfect cup of water.
After extensive research, I set out to build my own filtration system to make our water compliant with The Specialty Coffee Association’s (SCA) guidelines for optimum brewing water. Before long our coffee shop had customers asking how they could bring our water home with them so their coffee would taste the same in their kitchen as in our shop.
That’s why we developed the Third Wave Water (TWW) capsule.
By adding one TWW capsule to a gallon of distilled water (or water from a reverse osmosis system), coffee-lovers are now able to have the most ideal water to achieve optimum brewing results for coffee as laid out by the SCA.
